Gluten Free Chocolate Chip Cookies
2 1/4 cups Blend of Flour – Gluten-Free (see below)
1 teaspoon gluten-free baking powder
1 teaspoon baking soda
1/2 teaspoon salt
3/4 cup butter, softened
3/4 cup firmly packed brown sugar
1/2 cup sugar
2 large eggs
2 teaspoons gluten-free vanilla
1 (12-ounce) pack (2 cups) of semi-sweet, gluten-free chocolate chips or chunks.
1. Heat oven to 375°F.
2. Combine the flour blend, xanthum gum, baking soda, baking powder and salt in bowl. Set aside.
3. Combine butter, brown sugar and sugar in bowl. Beat on medium speed, scrape bowl often, ’til creamy. Add vanilla and eggs. Continue beating and scraping bowl, until mixed well.
Gradually combine flour mixture, while beating at a low speed ’til well mixed. Then add chocolate chips and stir.
4. Drop dough by rounded tablespoonfuls, 2 inches apart, onto ungreased cookie sheets. Bake for 9-12 minutes or ’til golden brown. (Make sure you don’t over-bake.) Let stand for 1-2 minutes then place on cooling rack.
Flour Blend (Gluten-Free): Mix 2 cups rice flour, 1/3 cup tapioca flour, 1 teaspoon xanthan gum and 2/3 cup potato starch. Use right amount for the recipe; store the remainder in an air tight container. Make sure to stir before using.
